Three days: the essentials
Day 1 - Chora. Collect the car at the port or airport, drop your bags, and spend the day on foot: the Kastro in the late morning while it is cool, lunch in the old town, an afternoon swim at Agios Georgios five minutes from the harbour, then the Portara at sunset and dinner on the waterfront. Do not drive on your arrival day; you will be tired and Chora's one-way system is unkind to newcomers. Day 2 - the mountain loop. Leave by 09:30. Chalki for coffee in the square and the Vallindras kitron distillery, Panagia Drosiani near Moni, then Filoti, then the climb to Apeiranthos for a late lunch. Come back down through Moutsouna if you want the east coast, or retrace for the faster route. Day 3 - beaches. Agios Prokopios, Agia Anna and Plaka run into each other along one road; pick two, swim, eat at a beach taverna, and finish at Mikri Vigla to watch the kitesurfers before you drive back for the ferry.
Five days: add the north and the south
Keep days 1–3 and add these. Day 4 - the north. This is the long one: 48 km up through Koronos to Apollonas, an hour each way on a road that is beautiful, paved, and single-lane in places. See the 10.7 m Kouros lying in his quarry, swim at Apollonas beach, eat fish at the harbour, and come back via the coastal road for a completely different view. Leave early and do not attempt it in the dark. Day 5 - the south. Drive to Alyko, park at the signed area, and walk through the cedar forest to the painted abandoned hotel and the three small beaches below it. Continue to Pyrgaki for the quietest sunset on the island. Stop at the Temple of Demeter at Sangri on the way back - it is a ten-minute detour and one of the most perfect small buildings in Greece.
Seven days: the version we would book
Days 1–5 as above, then: Day 6 - Mount Zas. Start from the Agia Marina trailhead above Filoti before 09:00, allow three hours return, take two litres of water per person and proper shoes. The summit at 1,004 m gives you the whole Cyclades on a clear morning - Paros, Ios, Santorini, sometimes Crete. Reward yourself in Filoti's plateia afterwards. Day 7 - keep it free. Book nothing. This is the day the meltemi blows too hard for the beach you planned, or the day you go back to the taverna in Apeiranthos, or the day you take the boat to Koufonisia. Every itinerary that fills all seven days is a worse itinerary than one that fills six.
Three scheduling rules that save the trip
First, do the mountains in the morning and the beaches in the afternoon, never the reverse: the inland roads are cooler and emptier before noon, and the west-coast beaches get their best light after 16:00. Second, watch the wind, not the temperature. A 28°C day with 7 Beaufort of meltemi makes Plaka and Mikri Vigla unpleasant and Moutsouna on the sheltered east coast perfect - check a wind forecast each morning and flip your plan accordingly. Third, never schedule a long drive on your departure day. Ferries from Naxos are punctual and the port area gets genuinely congested in August; be back in Chora two hours before sailing, which usually means no drive further than Plaka that morning.
